Spicy Peanut Vinaigrette

Prep time: 10 minutes

Yield: ½ cup


· 1/4 cup sesame oil

· 1/4 cup rice vinegar

· 2-3 tablespoons chili sauce

· 2 tablespoons low sodium soy sauce

· 2 tablespoons honey (use maple syrup if vegan)

· 1-2 tablespoons creamy peanut butter

· juice of 1 lime

Note: Sambal oelek is a nice chili sauce to use; use maple syrup to make this recipe vegan

To make the dressing: Combine all ingredients in a glass jar or measuring cup and shake (or whisk) until completely smooth.

Zuzh up your salad!

Vegetarian: Original recipe uses mushrooms and vermicelli rice noodles, with cucumbers, cilantro, mint and roasted peanuts

Non-vegetarian: Add grilled or satay chicken
