Shallot Vinaigrette

Prep time: 5 minutes

Yield: ¾ cup


· ¼ cup finely minced shallots (or red onion)

· ¼ cup white balsamic vinegar

· 2 pinches salt

· 1/8 teaspoon sugar

· 1/3 cup extra virgin olive oil

To make the dressing: Combine all ingredients in a glass jar or measuring cup and shake (or whisk) until completely smooth.

Zuzh up your salad!

Vegetarian: add thinly sliced radish, turnip, scallion and/or herbs

Non-vegetarian: add chunks of tuna or smoked fish
